Ang kaldereta ay mayroong 2 klase ng pagluluto at maraming pamamaraan
depende sa bayan o probinsya. Tinatawag itong traditional at special, ang
traditional ay walang asim ng tomato paste o tomato sauce at ang magdadala
ng asim ay ang suka. sa special na makabagong pamamaraan pinalitan nila ang
suka ng tomato sauce at kambing ang isinahog, para sa mas magandang
presentation, ngunit nawala ang orihinal na lasang traditional. Marami pa
ring restaurant at catering ang gumagamit ng resipeng ito.

Ang pagluluto ng kaldereta ay iba-iba, Baka, kambing o maging pato. Ang
traditional na kalderetang baka ay walang tomato sauce. Sa kambing ang
nilalagyan ng tomato sauce at maging ang pato ay iba rin ang mga sangkap.
Kapag ang kalderetang baka ay may tomato sauce, ang pamamaraan ng
paglulutong ginamit ay sa kambing, ginamit lamang ang baka bilang
substitute.

Tama ka, pero hindi lamang adobo ang nilalagyan ng suka. nariyan na ang
paksiw, bopis, dinuguan at marami pang iba. Kahit sa kalderetang kambing,
mas malinamnam ang lasa ng karne kung pakukuluan muna ito sa suka at toyo
bago lutuin sa tomato sauce.
